Particularly when it comes to food, Japan has a remarkable number of Guinness World Records. And now is home to "the most expensive ice cream in the world". Japan is a diamond mine for food lovers and Tokyo is the city having the most Michelin-star restaurants.
With their premium white truffle gelato offering, Japanese luxury ice cream company Cellato recently broke the record for the most expensive ice cream named "Byakuya Ice Cream". It has attracted a lot of attention from foodies and dessert enthusiasts around the globe.
What is the price?
Byakuya Ice Cream costs ¥880,000 per serving, ($6,500) and which comes to INR 5.3 lakhs.
While the high price tag may be prohibitive for most people, it is a testament to the creativity and innovation of the culinary world, and it serves as a reminder that there is always room for new and exciting creations in the world of food.

Why Byakuya Ice Cream is the most expensive in the world?
Although the price tag may seem exorbitant, but the creators have worked hard to source only the finest ingredients, and they have spared no expense in creating a dessert that is truly unique and unforgettable.
This ice cream from Cellato is a true masterpiece of culinary art. It has set a new Guinness World Record for the most expensive ice cream, and it has generated a lot of attention and buzz in the culinary world.
The gelato is served on a handcrafted metal spoon created by Kyoto-based Takeuchi artisans using the same methods and supplies used in the creation of temples & shrines.
The manufacturer says that the "discerning material" is what drives up the price. Italian "Phantom White Truffle," which is prized for its "sensual and distinctive scent," is widely used by Cellato. When coupled with the aroma of white truffles, the traditional Japanese ingredient's sake lees, which has a slight sweetness, and Ginjo incense, create a rich flavour.
The ice cream has costly ingredients including edible gold leaf, white truffle, and natural cheeses, according to Guinness World Records. The price of one kilogram of white truffle, which is grown in Alba, Italy, is astounding: Rs 12.5 lakh.
Other ingredients include black truffle, milk protein, thickening polysaccharide as stabilisers and emulsifiers, brewed alcohol, cashew nuts, natural cheese, sugar, rice, milk-based foods, rice malt, starch syrup, salt, & dairy products.

Byakuya should be prepared according to the approved method, which calls for mixing with white truffle oil until it becomes soft enough for a spoon to go into. If the ice cream cannot be pierced by the spoon, it must be cooked in the microwave at 500 watts for 10 to 20 seconds or maintained at room temperature until it can.
Although Byakuya has no expiration date, Cellato advises eating it within 10 days of purchase to maintain the flavour and texture. It took over 1 year and 6 months to develop this masterpiece as per reports and till now you must have got an idea, why it is the most expensive.
Though the goal was not to make the most expensive ice cream in the world but, to create an ice cream, they intended to combine ingredients from Europe and Japan. Cellato hired RiVi's head chef Tadayoshi Yamada to create this masterpiece. RiVi is an Osaka restaurant recognized for its inventive fusion food.
